Western Omelet


This is a favorite omelet.  Cut the omelet in two to create sandwiches, if desired.


2 tbsp sweet butter

6 large eggs

1/4 cup chopped green pepper

1/3 cup chopped scallions (use an onion if scallions not available)

3/4 cup milk

3/4 cup chopped ham

Salt and pepper to taste


Melt the butter in a skillet.

Whisk together the eggs with all of the other ingredients.

Pour egg mix into skillet.

Cook one side, flip, and cook the other.

Don’t overcook the omelet.
